A croque madame is a variant of the Croque monsieur dish topped with a fried egg. Decadent.

Ingredients
1CBéchamel Sauce
4thickish slices of white breadusually brioche
4TDijon mustard
4ozvery thinly sliced Black Forest ham
4ozthinly sliced Gruyere cheese
1/4grated Gruyere cheese
1/4second spray of oil
4large poached eggs
Pinchof arugula leaves
Instructions
First make Béchamel Sauce.
Slice 4 slices of bread. Toast them in a toaster till they are nicely crispy (on my toaster with a scale of 1-7, this would be a 6). Spread 1T mustard on each slice, and place 1oz ham and 1oz Gruyere on each slices.
Add 1T butter to a skillet and place all four slices on top of the melted butter so that they receive some flavor and the cheese starts to warm up. You want a butter crunchy toasted bread.
Then place the open faced sandwiches on a parchment lined baking sheet. Top each bread with ~1/4C Béchamel Sauce and grated cheese. Cook until the topping is browned.
While cooking make 4 poached eggs.
Once out of the oven place one melted bread on each plate, and add the poached egg on top.
Top the sandwiches with a pinch of arugula leaves topped some fresh pepper and a small dash of salt.
Notes
This is not a calorie watching food item. I have served this to people when I want something very fancy, but what I eat is a pared down version. Often I will serve with a little bit of fruit.Béchamel Sauce
