1/3CBrown Sugar
3TDijon mustard
3TTWhole Grain Mustard
3TFresh ThymeMinced
Instructions
Mise en Place
Meat station: mixing bowl, measuring spoons and cups, whisk and cleaning rag.
Oven to 350F.
Sauce or Glaze
Mix honey, brown sugar, mustards, and thyme in a bowl.
Prep Ham
Place aluminum foil on a baking sheet, then add parchment paper.
Put the half ham on the parchment with the wide part down
Pour half the glaze over the ham and using a brush make sure it gets everywhere.
Wrap the ham in the parchment and then use the foil to keep the parchment in place. The food is precooked so we just want to warm it up and add some flavor to the outside. The goal is not to dry out the meat, but keep it moist.
Place in the oven and cook ~1hour. Check to see if it is hot enough for your taste.
If it seems done, glaze once more with the rest of the sauce and place in the now 400F oven to bake the glaze in. Cook ~5-10 minutes. Remove from the oven.
Serve
I remove the meat from the wrapping and place on a platter. Then slice off a few pieces to make serving easier. Much like the photo shows. I dispose of the remaining juices, toss the paper and recycle the foil.
Notes
First time I cooked the ham and must admit I cooked it a bit too long. Still good but a bit dry. Made great sandwiches though.
