Orange Sweet Potato

Orange Sweet Potato

A great side, twice baked sweet potato with orange lentils, and the zest and juice of one orange.

  • 3 Beauregard sweet potatoes (~5″ long)
  • 1/2 C Orange lentils
  • 1/4 T Browned sage butter
  • 1 juiced orange and its zest
  • salt + pepper
  • 1 t Fresh sage (sliced)
  • 1/4 C roasted then chopped pecans ((or walnuts))
  • 4 t maple syrup

Mise en Place

  1. First wash the sweet potatoes well, and wash the oranges. Cut the potatoes in half lengthwise, and grate and juice the orange.

  2. Set oven to 350F and bake the sweet potatoes for ~1 hour, cut side down on a parchment lined baking sheet. Once done, remove from the heat but leave the oven on. Set aside to cool down enough to handle.

  3. Meanwhile, rinse the lentils and cook in ~1″ water, once done drain if needed and remove from heat.. Toast the pecans and chop into diced size.

  4. When sweet potatoes are cooled, scoop out the meat, keeping the skins intact. Put the sweet potato stuffing in a bowl.

  5. Add the lentils and the orange juice and zest. Add some salt and pepper and taste. Once it tastes good, re-stuff the skins with the new filling and place on the parchment lined baking sheet.

  6. Drizzle some maple syrup on top of each. Then add some of the chopped pecans. Put back in the oven for ~15 minutes to warm up.

  7. To serve put on a plate, add any remaining pecans and serve.

I made this for a holiday dinner, and everyone commented on how unique and good the taste of orange and sweet potato was. I only made this because I had some oranges that needed to be eaten and so I figured why not combine the two. If you want more of an orange flavor, just add more orange juice and zest, or to keep calories down just the zest.

The addition of quick cooking lentils and pecans (or walnuts) are there to up the protein. 

One serving is half a sweet potato.
