Dried Apple Slices
A recipe for making dried apple slices with a hint of cinnamon and a sweet-sour taste.
- 1 Pink Lady Apple ((or Granny Smith), skin on)
- 1 T Ground Cinnamon
- 1 Lemon Juice
Wash apples and remove stem. Wash Lemons and juice. Oven on to 200F.
Using a mandolin, shave thin slices of the apple starting with the bottom of the apple (not the sides) and continuing until you cannot slice anymore. A medium sized
Pink Lady will make ~30 slices. Review these slices and remove any bad spots, and all seeds with your knife.
Line up on a parchment lined baking sheet. They can touch but not overlap.
Using a brush, brush on some lemon juice to help the chips not brown. and sprinkle cinnamon on top.
Place pan in the oven and cook for at least 2 hours, turning the slices over at the one hour mark. Taste and if at the level of crunchy you want remove from oven. Otherwise keep in the oven and check after another hour.
I found 4 hours ideal for something really crunchy, and 2 hours great for something a bit more chewy.
When I slice from the bottom toward the top stem I get apple slices with little stars in the center and I think it looks good. However, when I slice from the side, I see more of the center formation and it does not look as inviting to me.
