Winter Fruit Salad
Using wonderful winter fruits and infused vinegar, a colorful and tasty fruit-based salad is great to serve to guests.
Salad
- 2 Apples (Peeled, diced, honey crisp or pink lady)
- 1 Pear (Peeled, sliced)
- 2 Kiwi (Peeled and sliced)
- 3 Tangerines (Peeled and added)
- 1 C Pomegranate Seeds
- 1 C Blueberries
- 1 C Raspberries
Dressing
- 1 T Honey
- 3 T Fresh lime juice and zest
- 1 T Poppy Seeds
- 2 T Fresh mint (Chopped)
- 4 T Infused Balsamic Vinegar (Cranberry + Pear, or Pomegranate)
Wash and cut the fruit, place into a bowl
Combine dressing into another bowl
Place dressing over the fruit, mix and chill in fridge before serving
Taste and modify dressing based on the flavor of the salad
Does not freeze, nor does it store well, as the vinegar starts to break things down. This is tasty but starts to turn mushy the next day. If not used in a hurry, use leftovers to make a fruit shake or mix in with oatmeal or millet porridge for a great breakfast.
