Chicken Salad

A treat to eat by itself or as a sandwich.

  • 1 Chicken Breast (Roasted and chopped into 1/2” squares)
  • 2 T Mayonnaise
  • 1/2 C Celery (Including leaves, chopped same size as chicken)
  • 2 T Dried Tarragon (I dry tarragon myself for better flavor)
  • 1/2 Lemon Juice
  • Salt and pepper (as required)
  1. Bake and chop chicken breast

  2. Thinly chop the celery (including leaves), and crush the tarragon.

  3. Combine chicken, celery, tarragon, lemon juice and salt and pepper in a bowl. Mix well, taste and adjust to meet your choice.

Choices

  1. Add this to toased bread as a sandwich

  2. Eat as a salad by itself
