Ingredients Mild
4-1/2t ground coriander
2T ground cumin
2T ground turmeric
3t ground yellow mustard
1/2t ground cinnamon
1-1/2t ground cardamon
4T ground paprika
1-1/2t fennel powder
3t fenugreek leaves mashed into powder
1-1/2t red pepper flakes
1/4t ground cloves
Ingredients Medium
2T ground coriander

2t ground ginger
1/2t ground black pepper
1/2t cayenne pepper
Directions
Combine all and shake in a lidded jar. Taste and adjust as needed.

I always thought of curry as Indian but my readings are showing it has a significant British influence as well. It basically is both a particular spicy dish and a collection of spices that have coriander, cumin, turmeric, mustard, cinnamon and cardamom in common, with additional spices added depending upon the region.
