— Peanut Dressing —
¼C Adams creamy peanut butter (1680c, 48k, 56p, 16f)
2T seasoned rice vinegar (40c, 10k, 0p, 0f))
2T lime juice and zest from the lime (10c, 3.2k, .16p, .2f))
3T olive oil (357c, 0k, 0p, 0f))
1T gluten-free Tamari (10c, 1k, 2p, 0f)

1t red pepper flakes

Directions
First wash hands, veggies, and herbs.
2) Chop the cabbage, peppers, carrots, and de-seed and chop the cucumbers. Chop the cilantro bunch (and most of the stems throwing away the bottom inch or so). Place all in a bowl and mix. This is the base salad.
3) Drain liquid from the tofu, slice in half, and press with cloth until dry, squeezing out all the moisture you can. Cut the tofu into bit sized squares. Coat a skillet with sesame oil, and grill tofu about 5 minutes on each side until crispier and tan in color. Set aside.
5) Make dressing by combining all the ingredients and whisking well.
6) Serve the veggie salad, topped with a portion of the tofu, and divide the dressing among the bowls. Can put in containers for lunches and dinners, lasts a ~ a week in the fridge provided the cilantro is held out and added just before eating.
