Ingredients
1 sheet thawed puff pastry (9-3/4″ square) (1367c, 111.96k, 18.13p, 3.7f)
1/4C sugar (192c, 50.4k, 0p, 0f)
1/2t ground cinnamon (3.2c, 1.1k, .1p, .7f)
4T ground almond nuts (133c, 5k, 4.75p, 3f)
8 teaspoons sour cream (192c, 4.5k, 2.3p, 0f)
1 large cut granny smith apple (63c, 15k, .5p, 3.1f)

Directions
First, position a rack in the center of the oven and preheat to 425F. Line a baking sheet with parchment. Wash the apples and remove the puff pastry from the fridge.
Place the thawed or refrigerated puff pastry on a lightly floured surface, pinching any creases together. Smooth out the dough with fingertips and roll out to make a large enough square to accommodate 4 servings. Then cut the pastry sheet into four equal squares, and carefully transfer the squares onto the lined baking sheet.
2) Combine the sugar and cinnamon in a small bowl and slice the apple (peel or not as you choose). Grind the almonds into a rough mixture being careful not to make a paste.
3) Sprinkle the sugar mixture onto the pasty. Add the ground almond nuts in the center part of the puff pastry squares. Then drop 1-2t of sour cream on top of the nuts and arrange the cut apple wedges on top. Sprinkled some additional cinnamon-sugar.
3) Fold the corners of the puff pastry over the apples until the tips are just touching, but not overlapping, and press the dough against the apples. By the dough not touching, it will give a “blossoming” look. Bake until puffed and golden brown on the edges, ~30 min. Let cool slightly. Then apply melted butter on top and sprinkle with more cinnamon-sugar.

I made this one day after realizing how many apples were growing on my Pink Lady Apple tree. Gave some to the neighbors and everyone liked the food. Kind of high caloric for me, but they enjoyed it.
Source: I got the idea for folding the pasty from a picture on the NoblePig website (see above). From there we have different portions of the same basic spices, and I prefer actual almonds rather than almond paste.
