Roasted Harissa Veggies

A tasty heated dish that was also filling. After I took this picture I decided to add a poached egg and it tasted great. Photo by PattyCooks.

Ingredients

Harissa Roasting Sauce
1/4C harissa paste (184c, 15.2k, 3.5p, 7.2f)
2T olive oil (238c, 0k, 0p, 0f)
1t honey (21.34c, 4.77k, .02p, 0f)
1T lemon juice (3.81c, 7.02k, .31p, .33f)

Roasted Veggies
2 broccoli heads chopped into florets (207c, 40.37k, 17.15p, 15.8f)
-save the broccoli stems for another dish
1 cauliflower head chopped into florets (144c, 30.48k, 11.38p, 14.4f)
4 carrots roast cut (25c, 5.84k, .57p, 1.7f)
4 chopped scallions (10c, 2.2k, .54p, .9f)
2T Everything Bagel seasoning (55.64c, 4.72k, 1.9p, 1.2f )
4 Eggs (poached or fried) (296c, 1.52k, 25.16p, 0f)
1/4 sec olive oil spray (1c, 0k, 0p, 0f)

Directions

First gather everything and wash the veggies. Set oven to 400F.

2) Make the sauce by combining everything in a bowl and mix.

3) Chop all the veggies and add broccoli, cauliflower, carrots in a bowl and mix with the harissa sauce.

4) Spray oil on the baking pan, spread out the veggies, top with a Everything Bagel seasoning. Place in the oven and cook for 30 minutes.

5) Cook the eggs right before you pull the veggies from the oven.

5) Dish and top with an egg and cut scallions.

Source I saw this on budgetbytes.comand made some changes to match my taste. This is a side dish that I made into dinner by adding the egg. I found it  very filling with just a slight after-heat from the harissa. Note I did not use any salt or pepper.
