Corn Bean Pepper Lime Salsa

This Youtube video presents Kitchen on Fire, a place I frequent to teach a German Cooking Class and to assist.

Ingredients

1 can black beans (218c, 39.74k, 14.47p, 16.6f)
2 grilled ears corn (154c, 34.2k, 5.8p, 4.8f)
4 spray of olive oil (4c, 0k, 0p, 0f)
1/3C diced red onion (16c, 3.88k, .36p, .54f)
1T seasoned vinegar (like Rice Vinegar) (0c, 0k, 0p, 0f)
2 de-seeded diced heirloom tomatoes  (62c, 14k, 2p, 4f)
1 de-seeded minced serrano pepper (2c, .4k, .1p, .2f)
Salt and black pepper 
1 juiced and zest medium lime (10c, 3.2k, .16p, .2f)
1/2C chopped fresh cilantro (2c, .28k, .18p, .2f)

Directions

First, wash hands and veggies.

2) Grill Corn in Stove: Preheat oven to 350F. Spray each cob 2 times with olive oil (on front and back sides), sprinkle salt and pepper on each corn. Place cobs on a parchment lined baking sheet and cook for ~40 minutes, turning halfway. Then broil the cobs for ~2 minutes on each side to darken. Using a knife, cut the corn from the cobs and place into a bowl.

3) Dice the red onion and place in a bowl with the vinegar to help temper the taste and set aside to marinate. De-seed and dice the tomatoes, and pepper and place in the bowl with the corn. Zest and juice one lime and add to the bowl. Chop some cilantro (including the stems) and add.

4) Open the can of black beans, rinse under running water, and mix with the corn using a wooden spoon. Add the onion and vinegar.

5) Taste and then season with salt and pepper.

6) Let this marinate for a while and mix occasionally to move the liquid around. Then serve.

The video above features Chef Olive (on the right) from Kitchen on Fire (a place I teach and cook at during my off hours). What is good about this video is that it demonstrates how to cut the onions, peppers, cilantro, bell peppers and a mango. The recipe is different than what I am describing here, as I do not use Mango but do use the rest of the ingredients.
