Croque Madam

A croque madame is a variant of the Croque monsieur dish topped with a fried egg. Decadent.

  • 1 C Béchamel Sauce
  • 4 thickish slices of white bread (usually brioche )
  • 4 T Dijon mustard
  • 4 oz very thinly sliced Black Forest ham
  • 4 oz thinly sliced Gruyere cheese
  • 1/4 grated Gruyere cheese
  • 1/4 second spray of oil
  • 4 large poached eggs
  • Pinch of arugula leaves
  1. First make Béchamel Sauce.


  2. Slice 4 slices of bread. Toast them in a toaster till they are nicely crispy (on my toaster with a scale of 1-7, this would be a 6). Spread 1T mustard on each slice, and place 1oz ham and 1oz Gruyere on each slices.
  3. Add 1T butter to a skillet and place all four slices on top of the melted butter so that they receive some flavor and the cheese starts to warm up. You want a butter crunchy toasted bread.

  4. Then place the open faced sandwiches on a parchment lined baking sheet. Top each bread with ~1/4C Béchamel Sauce and grated cheese. Cook until the topping is browned.

  5. While cooking make 4 poached eggs.

  6. Once out of the oven place one melted bread on each plate, and add the poached egg on top.

  7. Top the sandwiches with a pinch of arugula leaves topped some fresh pepper and a small dash of salt.

This is not a calorie watching food item. I have served this to people when I want something very fancy, but what I eat is a pared down version. Often I will serve with a little bit of fruit.
