Focaccia Pizza

Ingredients

1-1/3C warm (~110F) water
2t sugar or honey (32c, 8.4k, 0p, 0f)
1 (0.25 ounce) package active-dry yeast
3-1/2C AP flour (1592.5c, 332.5k, 45.5p, 11.9f)
1/4C extra virgin olive oil (476c, 0k, 0p, 0f)
2 teaspoons kosher salt

Hints on making Focaccia with Chef Michael Kalanty, who teaches at Kitchen on Fire.

Directions

First measure out all the ingredients. Get out the standing mixture with dough attachment. Preheat oven to 400F.

2) Add the warm water (~110°F) and sugar to the mixer bowl to combine. Sprinkle the yeast on top of the water and stir just a bit to mix, letting it sit for ~10min until the yeast is foaming.

3) Turn the mixer on low speed, and gradually add 3-1/2C AP flour, then the olive oil and salt.  Increase speed to medium-low, and continue mixing the dough for 5 minutes.

  • If the dough is too sticky add in up to ~1/4C flour while mixing.

4) Remove dough from the mixing bowl, and use hands to shape it into a ball.  Grease the mixing bowl with olive oil, and place the dough ball back in the bowl, covered with a kitchen towel.  Place in a warm location and let rise for ~1 hour.

5)  Turn the dough onto a floured surface, and roll it out into a rectangle to fit into your oiled baking sheet. Once in place, cover the dough on your oiled baking sheet with a greased piece of plastic wrap. I just spray oil one side and use that. Let the dough continue to rise for ~30min.

6) Remove the plastic wrap, and using your fingers, poke deep dents all over the surface of the dough.  Then drizzle ~1-2T olive oil evenly all over the top of the dough, and sprinkle evenly with some salt. Bake for 15 minutes, or until the dough is slightly cooked. Remove from the oven, and add your pizza toppings.

  • Red Sauce: In a medium bowl combine crushed San Marzano tomatoes, minced smashed garlic, and salt/pepper to taste and spread over the dough.

7) Put back in the oven to melt and brown the cheese. Keep an eye on the crust, you want it browned but not burnt. Remove from oven, let cool a bit on a rack, and then slice and serve.

Comment

Add some rosemary and salt and you have a traditional focaccia bread.

Use a red sauce and mozzarella with some basil and you have a pizza.
