Parmesan-Reggiano Cracker

Ingredient

1C finely grated Parmigiano-Reggiano cheese
1-½t Italian Spice Mix
¼t freshly ground black pepper

Directions

First, preheat oven 400F. Line a baking sheet with parchment paper.

2) Combine all the ingredients in a bowl and mix with a fork.

3) Spoon 1T of the mixture onto the parchment baking sheet, then use your fingers to spread the dollop into a ~3″ circle. Repeat. Keep a bit of space around each cracker so they bake evenly.

4) Bake until crispy gold. Then remove from the oven and using a spatula transfer the crackers onto a cooling rack.

5) Once cool to the touch, place in an airtight container and keep in the fridge.
