Radish Green Slaw

Ingredients

1 sliced small green cabbage
1 grated bunch of red radishes
1 thinly sliced + peeled kohlrabi
3 grated colorful carrots
1/2t Kosher salt
1t Ground lemon pepper
Dressing
1/4C Seasoned vinegar
1t Dijon mustard (3.1c, .3k, .2p, .2f, 135s)
1T toasted + crushed Cumin seeds
2t Honey

Directions

First, wash all veggies and then chop them all per instructions above. Combine all the diced and grated veggies into one large bowl.

2) Make the dressing and pour over the veggies. Mix well. Taste and season if needed with additional salt, pepper or vinegar.

3) Cool and serve.

This is a radish type of coleslaw with a subtle dressing that works well with green cabbage but not red cabbage.

I would use various types of radishes and various colors of carrots to up the color.
