Spinach Strawberry Feta Salad

I served the salad with some chicken on the side and kept the feta plain for my guest. My way or their way, this is such a beautiful salad and so tasty.

Ingredients

Salad
2C packed raw baby organic spinach (13.8c, 2.2k, 1.7p, 1.3f)
5 sliced large ripe organic strawberries (29c, 6.9k, .6p, 1.8f)
1/2t sugar (8c, 2.1k, 0p, 0f)
Crumbled herb Feta (1T = 34c)
1C crumbled Feta (396c, 6.14k, 21.32p, 0f)
1T chopped fresh rosemary
1T chopped fresh thyme
1T chopped fresh oregano
2T chopped fresh basil (all herbs: 26c, 4.78k, 1.41p, 1.22f)
1T extra virgin olive oil (119c, 0k, 0p, 0f)
Kosher salt and cracked black pepper
Dressing (1T = 88c)
1/2C extra virgin olive oil (954.5c, 0k, 0p, 0f) 
1T Dijon mustard (12c, 1.41k, .72p, .6f) 
Kosher salt and freshly ground pepper 
3T balsamic vinegar 
Serving
2 warmed pita bread (6.5″ diameter) (330c, 66k, 11p, 2.6f)

Directions

First, gather and wash everything. Pay attention to the spinach and strawberries if not organic, as they have high residual pesticides. To prep the strawberries, chop them in half lengthwise, then slice into small half slices. (This way they can have some strawberry with each bite.) Put the strawberries in a bowl and sprinkle in some sugar, in case they are not fully ripe. Just a pinch will do, you do not need to use a lot to have impact on the flavor. Leave the baby spinach as is.

2) Feta Dish: Crumble the block of feta cheese in a bowl, chop and add the fresh herbs and combine. Drizzle with olive oil and mix. Salt and pepper to taste.

3) Dressing: Combine all the ingredients in a lidded jar and shake well. Taste and adjust seasonings if desired.

4) Toast the pita, or warm them in the oven. Cut in half.

5) Serve a dish of spinach, topped with sliced strawberries. Then add 2T of the herbed feta and 2T dressing. Place the pita on the side of the salad and serve.

6) Put the additional feta cheese and dressing on the table for people to add more if they want.

Okay this is one of those recipes that I thought I created from air, but did a quick look online just now and there are variations of this dish all over. Sigh, it is so hard to be original these days. The reason I made this dish was that my 10 strawberry plants out back had a lot of berries, so I had to come up with a recipe to use them before they went bad.
