Tex-Mex Salad

Ingredients

Saute Sweet Potato

  • 1 Sweet Potatoe, medium Chop and sauteed

Meat Mixture

  • 1 can Black Beans rinse under running water
  • 1/2 # Ham Burger meat mix into small clumps
  • 2 T Olive oil
  • 1 Yellow Onion Diced
  • 2 Garlic cloves Minced
  • 1 Red Bell Pepper Chopped
  • Salt and Pepper to taste

Salad Dressing

  • 1/4 C Avocado Oil
  • 2 T Apple Cider Vinegar
  • 2 t Honey
  • 1 T Dijon Mustard
  • 2 T Hot Sauce Your choice of which
  • Salt and Pepper To taste

Salad

  • 2 bunches red tipped lettuce chopped
  • 2 C Corn Chips
  • 1 C Sharp Cheddar Cheese Grated
  • 1/2 Lime juice

Instructions

Meat Mixture

  • Dice onion, mince garlic, chop red pepper, chop sweet potato
  • Place oil into a hot skillet, add onion and then garlic until aromati., Then add sweet potato and cook until a bit soft, but not too mushy.
  • Add meat and season with salt and pepper.
  • Add red pepper and briskly toss all the ingredients. You want the pepper warm but still a bit crunchy. Then remove from heat.

Salad Dressing

  • Add all the items to a jar and shake well. Taste and season with salt and pepper. Add more hot sauce if you want.

Salad

  • Rinse and chopp salad and place into bowls.
  • Add grated cheddar cheese.
  • Place chips around the bowl.
  • Dump appropriate amount of the meat mixture onto the top of the salad.
  • Add dressing and a squeeze of lime.

Additional topping options

  • Avocado, chopped cilantro, carrots, tomatoes, etc.

Notes

This salad is very filling. I serve it as a salad meal, not as a side. There are lots of veggies or herbs you can add to increase flavor. You can change up meat by using ground pork, or chicken, or even turkey. You can use pepper jack cheese instead of cheddar. Lots of variations to continue to make the salad ineresting.
