Tex Mex Slaw

I usually will add this slaw to tacos or enchiladas as a topping, great accent to comfy food.

Ingredients

  • 1/2 small red cabbage head chopped into bite-sized pieces
  • 6 red radish matchstick
  • 1 jalapeño pepper diced (optional to remove membrane and seeds, heat is in the membrane)
  • 2 C red radish greens chopped
  • 3 T salsa use store bought or make your own
  • 3 T corn salsa use store bought or make your own
  • 1 T mayo
  • 2 limes juiced to “lime it up” add zest as well
  • 1 t kosher salt
  • 1 t ground lemon pepper

Instructions

Mise en Place

  • Wash and prep all veggies

Combine

  • Combine all veggies, seasoning, and condiments

Serve

  • I serve with Tacos or Enchiladas

Notes

I generally serve this dish when eating mexican-type food. If not used in fish tacos, this is a great side dish for shrimp or veggie tacos or enchiladas.
